Cilantro Lime Quinoa

Cilantro Lime Quinoa is healthy dish,  loaded with tangy lime juice and fresh cilantro/ coriander. This is one more way of cooking quinoa in tasty way for a healthy diet. Its Vegan and Gluten-free. Total Time: 30 mins Serves : 2 Ingredients: 1 cup uncooked quinoa 2 cups water or vegetable stock 1 bunch fresh cilantro(2 cups)/Coriander leaves 1 medium lime(juice and zest) 2 tbsp Yogurt/Curd (Vegan can skip this ingredient) 1/2 tsp garlic powder/garlic paste 1/4 tsp salt (more to taste) 1 tsp black pepper Method: 1. Rinse quinoa a few times in cold water. 2. Bring quinoa and water or vegetable stock to a boil in a medium saucepan, and then reduce to a simmer. Season with salt.Simmer for 15-20 minutes until quinoa is fluffy and cooked through. Remove from heat and mix with a fork. 3.
