Celery Noodles Soup is vegetarian soup ,filled with vegetables and served with noodles. It is a  delicious way to eat your vegetables. Its vegan and gluten-free. Total Time: 30 mins Serves : 4 Ingredients:  4 cups water/vegetable broth 1 medium onion chopped 4-5  garlic cloves 2 tbsp chopped ginger 1 pound celery (stalks, leaves, EVERYTHING) chopped 1 teaspoon salt 1/4 teaspoon pepper 1/2 cup coconut milk 2 cups cooked noodles(I used Korean buckwheat noodles) 1 tsp olive oil 2 cup Vegetables ( i used carrots, Broccoli, Cauliflower) Method: 1. In a large pot, add water/broth and bring to a boil.  Add celery, onion and garlic. Cook on low boil for 20 minutes. 2. This sweet potato and Zucchini  noodles recipe is  loaded with so much flavor !  This is vegan and gluten-free, prepared by tossing  Sweet Potato and Zucchini noodles  in spicy, creamy nut (peanut butter and cashew) sauce. Total Time: 20 mins Serves : 2 Ingredients: 1 large sweet potato, grated like noodles 1 large Zucchini, grated like noodles 1 tsp olive oil 1 medium onion, thinly sliced 1/2 cup cilantro/Coriander, roughly chopped 1 lime 1/2 cup raw cashews 1/2 tsp garlic powder 1 tbsp thick coconut milk 1 tsp soy sauce(or tamari) 2 tbsp hot chilli sauce (more to taste, i used sriracha hot sauce) 2 tbsp peanut butter (or almond butter) 1 inch piece of fresh ginger, peeled Method: 1.
