Celery Noodles Soup is vegetarian soup ,filled with vegetables and served with noodles. It is a delicious way to eat your vegetables. Its vegan and gluten-free.

Ingredients:
4 cups water/vegetable broth
1 medium onion chopped
4-5 garlic cloves
2 tbsp chopped ginger
1 pound celery (stalks, leaves, EVERYTHING) chopped
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup coconut milk
2 cups cooked noodles(I used Korean buckwheat noodles)
1 tsp olive oil
2 cup Vegetables ( i used carrots, Broccoli, Cauliflower)
Method:
1. In a large pot, add water/broth and bring to a boil. Add celery, onion and garlic. Cook on low boil for 20 minutes.
2. In another pan, heat olive oil and add vegetables like carrot, cauliflower, broccoli. Cook for 10 mins(until vegetables are cooked)
3. When celery are done cooking, use blender to make a puree. This is very hot, so be careful. Do this for a few minutes until it's completely creamy and there are no chunks left.
4.Add coconut milk to the pot and heat on medium heat for 5 minutes, mixing occasionally.
5. Cook the noodles as per package instructions.
6. Add cooked vegetables (carrot, cauliflower, broccoli)and noodles to pot and stir. Adjust the salt and pepper as per taste. Serve in bowls.
