Pindi Chole Recipe

Pindi Chole is a very popular main course dish from the Indian Punjabi cuisine  made by cooking chickpeas/garbanzo beans with an onion tomato masala spices.

Cook Time: 30 mins Cuisine : Indian Serves : 4

Ingredients:

Boil Chole/Garbanzo bean/Chickpeas

1 cup chole/chickpeas/Garbanzo bean soaked in water overnight(8 hrs)
1 tsp tea leaves 2 bay leaves 4 cloves
1/2 tsp baking soda 1 inch cinnamon stick 3-4 green cardamom, lightly hammered 1 tsp salt 1 ltr water

Chole Masala

2 tbsp oil 1 med size chopped onion
2 green chillies 1 tbsp Ginger garlic paste 1 tsp Coriander powder 1 tsp Amchur/ Dry Mango powder 1 tsp roasted & ground cumin seed powder some mint leaves coriander/cilantro leaves 1/2 tsp red chilli powder 1 tsp Garam masala 1 tsp Kasuri methi/dry fenugreek leaves 2 medium sized tomatoes, chopped/ 1 cup Tomato puree.

Method:

1. Boil 1 cup water with 1 teaspoon tea for 15 minutes on low flame.
2. Add the chole to the pressure cooker and also add the salt, baking soda, boiled&Strained tea , green cardamom, cinnamon, cloves & bay leaves. 2. Add water & stir well then close the lid 3. Put heat on high till the first whistle,then reduce heat to low & cook for 15 minutes more 3. Remove from heat & let the pressure subside the open the cooker & check the chole. they will be soft 4. Strain out the water & save it. Remove the whole spices from the boiled chole 5. In A large pan heat 2 tbsp oil on medium heat. when hot add the chopped onions, green chillies & saute till light pink. 6. Add the ginger garlic paste & saute till light brown 7. Add the chopped tomatoes/puree & cook till soft. then reduce heat to low & add the coriander powder, garam masala, 1 tsp jeera powder, kasuri methi, 1/2 tsp red chilli powder, amchur/mango powder, & some mint leaves 8. Stir mix for about a minute then add the boiled chole. mix well & add some coriander/cilantro leaves and mix again. 9. Saute the chole for 2-3 minutes. now add the chole water as much as you need & raise heat to medium. save any remaining water for later use 10. Mix well and let the water come to a boil. reduce heat to medium, cover with a lid & cook till chole turn thick stir it from time to time 11. Now transfer chole to a serving bowl. Serve hot chole with poori/bhature/parantha.
