Squash Tater tots are a healthier,delicious and a great way to get an extra dose of vegetables into your diet especially for kids. These tots are baked and filled with yellow squash, potatoes and cheese.

15 tater tots
Ingredients:
1 large yellow squash shredded
1 large russet potato
2 tsp whole wheat flour
2 tsp semolina(optional)
1½ teaspoons salt
olive oil
Method:
1. Preheat your oven to 400°F. Line a large baking sheet with parchment paper.
2. Boil the potato in pressure cooker or large pot until fork tender. Remove the potatoes from the water to cool enough to handle.
3. Grate the squash on the large side of a grater. In a clean dish towel/cheesecloth, squeeze out the excess liquid of the squash.
4. Grate the potatoes and add them into the bowl with the grated squash.Add cheese, 2 tsp of whole wheat flour, semolina and Sprinkle with the salt. Mix everything together.
5. Use your hands to form mixture into small tater tot shapes,(about 1 tablespoon of mixture per tater tot). Place the baking sheet in the freezer for about 10 minutes to allow them to firm up.
6. Brush the top of each tater tot with a small amount of olive oil
7. Bake tater tots until browned on a few sides and crispy, about 30-40 minutes flipping them halfway though.
8.Sprinkle some cilantro on top and Serve with ketchup.
