This Healthy version of butternut squash soup recipe is super easy ,creamy and delicious food anybody can get.

Ingredients
- 2 tbsp olive oil
- 1 cups chopped yellow onion
- 1 butternut squash cut into slices
- 1 tsp garlic powder
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1 cup cooked pasta of any choice(optional)
- 6 cups vegetable stock/water
- 2 cups veggies of your choice(i added carrot, cauliflower, broccoli)
- 1 tsp parsley leaves
- 1 tsp basil leaves
Method:
1. Heat the 1 tbsp oil in a soup pot over medium heat, then add the onion, salt, and pepper, and cook for 10 minutes, until the onions are soft.2. Now add sliced butternut squash and water/vegetable stock. Cook until butternut squash is cooked completely.
3. Cool it completely and grind the complete mixture in blender.
4. In large pan take 1 tsp of oil , add the veggies of your choice and cook it.
5. Now mix blended mixture with cooked veggies and boil it for 5mins
6. At this stage you can also add cooked pasta(al-dente) of your choice. Sprinkle basil and parsley leaves, Adjust the seasoning according to your taste.
7. Take serving bowl and put the soup in it and crush pepper/chilli flakes on top of it.
Note:
1. We can replace Butternut squash with other veggies such as celery, cauliflower, broccoli etc and make soup with same above ingredients and method. I have tried it all. It tastes amazing as well.
2. You can also add boiled black/red/white beans to this soup.
