INGREDIENTS:
Brownies:
- 1/2 cup + 2 tablespoons salted butter melted (for Vegans Use vegetable oil)
- 1 cup granulated sugar
- 2 large eggs(for Vegans, instead of eggs use 1/2 teaspoon Baking Powder and 1/2 cup water)
- 2 teaspoons vanilla extract
- 1/2 cup melted milk chocolate chips
- 3/4 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 1 cup milk chocolate chips
Coffee Ice-cream:
- 1 cup heavy whipping cream
- 1/2 cup condensed milk
- 1 teaspoons vanilla extract
- 1/4 cup unsweetened cocoa powder
- 2 teaspoon dark coffee(i used Starbucks dark french roast)
- 1 cup milk chocolate chips
Method:
Brownies:
- Preheat oven to 350 degrees F. Line a metal 9x9 pan with parchment paper.
- Pour melted butter into a large mixing bowl. Whisk in sugar by hand until smooth, 30 seconds.
- Add in eggs(optional for vegans) and vanilla extract. Whisk 1 minute.
- Whisk in melted chocolate until combined and smooth.
- Use a rubber spatula to stir in flour, cocoa powder, and salt (add Baking powder and water here if egg is not used) until just combined. Stir in whole chocolate chips.
- Pour into prepared pan and smooth out.
- Bake in the preheated oven for 30 minutes. Let cool in pan 30 minutes before slicing.
Coffee Ice-cream:
1. Keep the bowl and whisking tool in freezer for 10mins.
2. Add heavy cream to cooled bowl and whisk until it becomes fluffy( medium in the beginning and fast at the end),
3. Now add condensed milk, vanilla essence, coffee, and cocoa powder and whisk for about 5 mins. Add chocolate chips and mix it using spatula.
4. Now pour the above mixture to air tight container and freeze it for 2 hours or more if needed.
Server the brownies with scoop of ice-cream on top and also can use chocolate syrup to garnish.
