Banana Bread

Banana Bread Recipe is perfectly sweet, moist  and delicious with loads of banana flavor. The very best way to use up overripe bananas on your kitchen counter-top by making healthy banana bread. My family loves this bread, i have tried/added notes on all variation of the banana bread recipe you can prepare.

Ingredients:

8 tablespoons/1 stick unsalted butter(Vegans can use coconut oil)
Cooking spray
1 cup granulated sugar(you can also use brown sugar instead)
1/2 cup milk(Use milk alternative for vegan)
2 teaspoon vanilla extract
3 medium bananas, very ripe
2 cups all-purpose flour/whole wheat flour 
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 tablespoon vinegar
1/2 teaspoon cinnamon
1/2 cup chopped nuts or chocolate chips (optional)

Method:

1. Preheat oven to 350°F . Line a 8-inch x 5-inch loaf pan with parchment paper, letting the excess hang over the long sides to form a sling. Spray the inside with cooking spray.
2. Melt the butter in the microwave or over low heat on the stove-top. Place the melted butter and sugar in a large bowl and whisk until combined 

3. Mash the bananas separately until no more lumps remain and add to the batter.

4. Whisk the milk and vanilla extract into the batter . You can mix this by hand, or use a hand mixer on low speed.
5. Measure the flour, baking soda, baking powder,cinnamon and salt into the bowl. Switch to using a spatula and gently stir until the ingredients are just barely combined and no more dry flour is visible.

6. Stir in the vinegar. Last but not least, scatter the nuts or chocolate over the batter and gently fold them in.

7. Pour the batter into the prepared loaf pan. Bake until the top of the cake is caramelised dark brown with some yellow interior peeking through and a toothpick or cake tester inserted into the middle comes out clean, 50 to 65 minutes

8. Cool in the pan for 10 minutes, Remove from pan and cool another 10 minutes

Notes

You can replace the milk with a milk alternative of your choice(coconut milk, almond milk or soy milk). 
You can also make Low sugar banana bread where you can use anywhere between 1/4 cup – 1 cup sugar for this recipe
You can replace all purpose flour with whole wheat flour for more healthy version.
Add 2 eggs for more protein intake, If you are using eggs you can skip using baking powder and vinegar. Add the eggs right after mixing butter and sugar, Whisk until completely combined and the mixture is smooth.
