This sweet potato and Zucchini noodles recipe is loaded with so much flavor! This is vegan and gluten-free, prepared by tossing Sweet Potato and Zucchini noodles in spicy, creamy nut (peanut butter and cashew) sauce.

Ingredients:
1 large sweet potato, grated like noodles
1 large Zucchini, grated like noodles
1 tsp olive oil
1 medium onion, thinly sliced
1/2 cup cilantro/Coriander, roughly chopped
1 lime
1/2 cup raw cashews
1/2 tsp garlic powder
1 tbsp thick coconut milk
1 tsp soy sauce(or tamari)
2 tbsp hot chilli sauce (more to taste, i used sriracha hot sauce)
2 tbsp peanut butter (or almond butter)
1 inch piece of fresh ginger, peeled
Method:
1. In Large pan, heat the oil and saute the sliced onions until it turns soft.
2. Grate the sweet potato , zucchini like noodles using grater or food processor and add them to the pan.
3.Cover and cook for 5 minutes or until the noodles are tender. Be careful not to overcook.
4.Make the sauce by adding coconut milk, cashews, soy sauce , hot sauce, peanut butter, peeled ginger and garlic powder to a high powered blender and blend on high until the sauce is smooth and creamy.
5. Pour the sauce, fresh cilantro, and lime juice over the noodles, stir well to combine.
Notes
You can substitute Sweet Potato and Zucchini with butternut squash noodles, or flour noodles , or also can prepare it individually without mixing 2 noodles.
You can also add cooked kale/ spinach to this noodles
