INGREDIENTS:
2 cup of Old fashioned oats
3 scoops of Vanilla/Chocolate protein powder
2 tsp of baking powder
1 tsp of baking soda
2 tsp of vanilla extract
1 cup of unsweetened almond milk
1/2 cup Yogurt
1/2 cup fresh/frozen blueberry
1/4 cup vegetable oil
Method:
1. Preheat oven to 360 degrees.
2. In food processor , add 2 cup of Old fashioned oats and make a fine powder.
3. Add powdered oats, protein powder, almond milk, oil and yogurt into a large bowl.
4. Whisk together to make batter.
5.Add in the baking soda, baking powder , vanilla extract and blueberry, and whisk again.
6. Pour mixture into the muffin pan, making roughly ten (10) muffins.
7. Bake for 15-20 minutes, checking on them about halfway through.
Note:
Protein powder has little sweetness, so i haven't added any extra sweetness(You can add brown sugar/honey if you need more sweetness).
You can also add 2 eggs to make it more protein based muffin(you can skip baking soda if eggs added )
Add 1 banana + 4 tbsp of chia seeds into the mix before pouring into the pan for fiber-rich banana muffins.
