Quinoa Fried Rice is healthy take on every one favourite Chinese fried rice. This recipe is easy to prepare and every bit is delicious as the original friend rice.

Ingredients:
1 cup uncooked quinoa
2 cups water or vegetable stock
1/2 onion, chopped
2 garlic cloves/ 1 tsp garlic powder
½ tsp freshly grated ginger
2 ½ Tbsp. soy sauce
¾ tsp. sesame oil
2 tbsp vinegar
1 tsp chilli paste
1 tsp schezwan sauce
1 green bell pepper
1 red bell pepper
1/2 cabbage, chopped
2 Tbsp. olive oil
1 tsp green onions
1/2 lime
Method:
1. Rinse quinoa a few times in cold water.
2. Mix soy sauce, vinegar and sesame oil in a small bowl. Set aside
3. Bring quinoa and water or vegetable stock to a boil in a medium saucepan, and then reduce to a simmer. Season with salt.Simmer for 15-20 minutes until quinoa is fluffy and cooked through. Remove from heat and mix with a fork.
4. Heat 1 tablespoon olive oil in a large pan over a high heat. Add onion ,saute until it turns pink. Add garlic and ginger to the pan. Cook until raw smell goes off.
5. Now add bell peppers, cabbage and stir fry for 2 mins.
6. Now add soy sauce mixture , chilli sauce and schezwan sauce and cook for 2 more mins.
7. Add in the quinoa. Stir-fry about two minutes. Add green onions and Squeeze lemon on top of it and mix. Then toss everything together .Season with salt and pepper.
