Cilantro Lime Quinoa is healthy dish, loaded with tangy lime juice and fresh cilantro/coriander. This is one more way of cooking quinoa in tasty way for a healthy diet. Its Vegan and Gluten-free.

Ingredients:
1 cup uncooked quinoa
2 cups water or vegetable stock
1 bunch fresh cilantro(2 cups)/Coriander leaves
1 medium lime(juice and zest)
2 tbsp Yogurt/Curd (Vegan can skip this ingredient)
1/2 tsp garlic powder/garlic paste
1/4 tsp salt (more to taste)
1 tsp black pepper
Method:
1. Rinse quinoa a few times in cold water.
2. Bring quinoa and water or vegetable stock to a boil in a medium saucepan, and then reduce to a simmer. Season with salt.Simmer for 15-20 minutes until quinoa is fluffy and cooked through. Remove from heat and mix with a fork.
3. Add all cilantro lime sauce ingredients to a high-powered blender and blend it on high until smooth and creamy.
4.Mix the cilantro lime sauce into the hot or cold cooked quinoa until all of the quinoa has turned green.
Finally Serve this Cilantro Lime quinoa as side dish with any of your favourite food.
