This vegan coconut cookies have all the coconut flavor you could dream of.The recipe for coconut cookie is simple and easy to make as it is made with basic ingredients available in every kitchen. it can be ideal sweet and savoury evening snack.

Ingredients:
- ½ cup butter, softened (For Vegan use vegan butter)
- ½ cup sugar
- 1 cup whole wheat flour
- ½ tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- 1 cup desiccated coconut
- 3 tbsp milk (For Vegan use coconut/soy milk)
- 1 tsp vanilla extract
Method:
1.In a large mixing bowl take ½ cup butter and ½ cup sugar. beat for 2 minutes or until the mixture turns creamy.
2.Now sieve 1 cup wheat flour, ½ tsp baking powder, ¼ tsp baking soda and ¼ tsp salt.
add 1 cup desiccated coconut.beat and combine the flour with butter mixture.
3. Now add 3 tbsp milk and 1 tsp vanilla extract.continue to beat and mix until the mixture is combined well.
4. cookie dough is ready, cover it in plastic wrapper and refrigerate for 30 minutes.
5. Preheat the oven to 350°F (180°C).(You can also bake using pressure cooker method instead of oven)
6. Roll the cookie dough into balls and place onto a parchment lined baking tray.
7. Bake for 12 minutes. The edges will be firm and set but they will still be very soft in the middle. This is fine, they will firm up as they cool.
You can store the coconut cookies in an airtight container and enjoy for a week.
