Healthy version of Creamy Butternut Squash Pasta recipe is very easy and delicious to taste.It is healthy option for lunch and Dinner.

Ingredients
- 2 tbsp olive oil
- 1 cup chopped yellow onion
- 1 butternut squash peeled and cut into 2-inch cubes
- 1 tsp garlic powder/pods
- 1 tsp salt
- 1 tsp black pepper
- 1 cup pasta of any choice(i used rigatoni)
- 1 cup spinach
- 1 tsp Italian seasonings, basil, parsley leaves
- 2 tsp Parmesan cheese(for Vegan use vegan cheese)
Method:
1. On a large baking sheet lined with parchment paper, arrange the butternut squash, onions, garlic and drizzle with olive oil and season with salt and pepper.
2.Transfer into a 425-degree oven and roast for 25-30 minutes until the squash is fork tender.
3.While the butternut squash is roasting, cook the pasta until al dente. Drain, reserving ½ cup of the cooking liquid.
4.Once the squash is tender, remove and transfer to a blender with the garlic and onions with veg stock. Blend until smooth. Add the reserved cooking liquid and continue to blender. Once smooth, taste and adjust seasoning as needed.( At this stage you can also add cream for more creamy texture)
5. Transfer the liquid to a medium pot and keep over low heat to keep warm.
6. On a medium sized pan saute the spinach in medium heat.
7. Add a few large spoonful’s of the sauce to the pasta and toss to combine. Continuing adding sauce until it’s as saucy as you want. Also add cooked spinach.
Serve with Parmesan, herbs and freshly cracked black pepper/chilly flakes.
