Baked Zucchini Tots are the latest and greatest way to get our family eat greens/veggies especially kids.These tots are made with cheese and shredded Zucchini make a great side dish or snack.

Ingredients:
2 zucchinis, about 2–3 cups shredded
1/4 medium onion, minced
1/2 cups shredded cheese (could use any low fat cheese)
1 cup crushed cereal such as cheerios / Breadcrumbs
1 1/2 teaspoons Italian Seasoning
1/2 teaspoon garlic powder
salt and pepper
Method:
1. Preheat oven to 400°F. Spray a baking sheet with cooking spray.
2. Shred the zucchini using the large hole on the side of a box grater then transfer it to a kitchen towel or strainer and squeeze out as much liquid as possible.
3. Transfer the strained zucchini to a medium bowl then add the diced onion, breadcrumbs, cheese(mozzarella/cheddar/Parmesan), Italian Seasoning, 1/4 teaspoon salt and 1/4 teaspoon pepper and mix until combined.
4. Using a 2-teaspoon cookie scoop, spoon out tightly packed portions of zucchini mixture and place on parchment paper lined baking sheets. This is to help them not spread.
5.Bake for 20-25 minutes until golden.
NOTES
1. Do squeeze the moisture out of the zucchini or you'll end up with with soggy tater tots instead of these cheesy crispy tots.
2. You can use 2 eggs to the mixture if you need add to protein in this healthy dish.
3. You can also use fresh herbs like combo of basil, parsley and chives for a maximum of flavor.
4. You can also add chopped green chillies, ginger to the mixture to get spicy twist.
