Amazing Mexican Quinoa salad is a very healthy meal in one dish. The salad is so colorful and vibrant, it contains quinoa, black beans, corn, fresh tomatoes, avocado, lime juice, jalapenos/green chilies, onions and cilantro. Make this Mexican quinoa salad for any occasion.

2 cups water
1/2 medium sized onion diced
2 Tbsp lime juice
1 cup cooked black beans
1 cup fresh corn (optional)
1 ripe Avocado chopped
2 medium tomatoes, unseeded and cut into chunks
1 jalapeno, unseeded and finely chopped/ 2 green chilies unseeded and finely chopped
1/4 cup chopped cilantro
2 Tbsp extra virgin olive oil
1 tsp honey
salt and pepper as per taste
Remove from heat and let sit for 5 minutes.
2. For Salad Dressing take 1 cup or mixing jar, add 2 tbsp lime juice, 2 tbsp olive oil, 1 tsp honey, 1/2 tsp salt and 1/2 tsp pepper and mix/shake it well.
3. In a large bowl add cooked and cooled quinoa, black beans
corn kernels, tomatoes, jalapenos/chilies, cilantro, avocado and onions
4. Mix it gently and pour dressing over the salad and mix it well. Adjust the salt and pepper accordingly.
5.Sprinkle it with roasted black and white sesame seeds( you can also add sunflower seeds/pistachios on top) and Serve at room temperature.

1 cup uncooked quinoa, well rinsed2 cups water
1/2 medium sized onion diced

METHOD:
1. Cook the quinoa: Put the rinsed quinoa, salt and water into a pot and bring it to a boil. Cover and simmer gently until the quinoa absorbs all the water, about 10-15 minutes.Remove from heat and let sit for 5 minutes.
