This dish is one of the great flavors of Southeast Asia: It combines sweet, spicy, and sour flavors in one bowl. This is very easy and quick version of Vegetarian Thai curry recipe.

Serves: 4Ingredients
- 2 tbsp olive oil
- 2 tbsp ginger, minced
- 1 large onion, thinly sliced
- 2 tbsp light brown sugar
- 1 cups unsweetened coconut milk
- Salt and freshly ground pepper
- 1 tbsp chilli paste
- 1 tbsp Thai curry powder
- 1/2 cup peas
- 1/2 cup beans
- 1/2 cup carrots
- 1/2 cup broccoli
- 1 tbsp sriracha sauce
- 1 tbsp soy sauce1
- 1 pound thin wheat noodles( you can choose any rice noodles also)
Method:
1. In a large, deep pan heat the oil. Add the onions and ginger and cook over moderate heat, stirring occasionally, until its softened and golden, about 5 minutes.
2. Add the brown sugar , chilli paste , soy sauce and all the vegetables ,cook until the vegetables are cooked( about 7 mins ).
3. Add the coconut milk , Thai curry powder , pepper and salt ,simmer, stirring, for 2 minutes. Thai curry is ready.
4. Bring a large pot of salted water to a boil. Add the noodles to the pot and cook as per instructions ( wheat noodles I used had to cook for 7 mins) Drain, wash with cold water to avoid to become mushy.
5.Take a serving bowl , add noodles on one side and curry on the other side and serve it right away.
