Quinoa Chana Masala(Quinoa in Black chickpeas Masala)

Quinoa Chana Masala is Kala chana/Black chickpeas and Quinoa mixed with masala and other flavourful spices. This Quinoa chana masala  bowl is vegetarian and Vegan friendly! So healthy, flavorful and delicious!

Ingredients:

2 cup uncooked quinoa
4 cups water or vegetable stock
1 cup Kala Chana/Black chickpeas
1/2 diced onions
1 diced tomato
2  green chillies
2 tsp olive oil
1 tsp ginger garlic paste
1/2 tsp turmeric powder
1 tsp Shahi Jeera/ Royal cumin seeds
1 bay leaf
1 cinnamon stick
1 tsp black peppercorn
1 tsp Garam masala/pulav masala
1/2 medium lime(juice)
1 tsp salt (more to taste)
few coriander, finely chopped

Method:

1. Rinse quinoa a few times in cold water.
2. Bring quinoa and water or vegetable stock to a boil in a medium saucepan, and then reduce to a simmer. Season with salt.Simmer for 15-20 minutes until quinoa is fluffy and cooked through. Remove from heat and mix with a fork.
3. Boil the Kala chana/Black chickpeas in cooker for 30mins(medium) Put heat on high till the first whistle,then reduce heat to low & cook for 15 minutes more
4. Remove from heat & let the pressure subside the open the cooker & check the Black chickpeas. they will be soft
5. In A large pan heat 2 tsp oil on medium heat. when hot add bay leaf, cinnamon stick ,peppercorn and shahi jeera. Saute for 1 min and  add the chopped onions, green chillies & saute till light pink.


6. Add the ginger garlic paste, turmeric & saute till light brown
7. Add the chopped tomatoes & cook till soft. then reduce heat to low & add the garam masala/Pulav Masala. 

8. Now Add the boiled Black chickpeas and mix it well. Add salt.
9. Finally mix quinoa in above masala, Squeeze lemon juice on top it   and Sprinkle some coriander leaves.
10. Quinoa Chana Masala is ready to serve.
