A delicious gluten free makeover of traditional Semolina upma, this cauliflower upma/rice is no less in taste and texture. Upma is a really popular south Indian breakfast made from cream of wheat (semolina) . Not only it is easy to make, but it is also super healthy vegan/vegetarian recipe.

Ingredients:
• Oil - as required.
• Mustard seeds - 1 teaspoons.
• Dry red chillies - 4 numbers.
• Peanuts - 1 tablespoons.
• Chana dal - 1 tablespoons.
• Cashewnuts - 1 tablespoons.
• Urad dal - 1 tablespoons.
• Cumin seeds - 1 teaspoons.
• Curry leaves - 4 spring.
• Green chillies - 4 numbers.
• Ginger - small.
• Onion - 1 numbers.
• Cauliflower - 1 numbers.
• Tomato - 1 numbers.
• Water - as required.
Method:
1.Steam the chopped cauliflower for 10 minutes. Then, process ituntil it acquires a fine rice like texture.
2.Place the processed cauliflower in a clean cheese cloth or kitchen towel
and squeeze out the moisture as well as you can.
3.Take a pan and add oil add mustard seeds, dry red chilies, peanuts,
chana dal, cashew nuts, urad dal, cumin seeds. Saute it for few mins.
4.Then add curry leaves, slit green chillies, chopped ginger and mix it well.
Saute all these for few mins.
5.Now add chopped onion,tomato and salt. Then saute for few mins.
6.Finally add grated cauliflower and mix it well.Then saute for few mins.
You can serve it with pickle/yogurt.
