Cauliflower pancake is an easy way to get an extra dose of vegetables at breakfast/lunch/Dinner. This dish is super healthy, less calorie d(very less carbohydrates) and delicious food that every one will enjoy.
Total Time: 20 mins
Servings : 6 pancakes
• Cauliflower - 1/2 head.
• Parmesan cheese - 1/2 cup (You can also add shredded cheddar )
• Onion - grated 1/4 cup
• Bread crumbs/Whole wheat floor - 1 cup.
• Ginger - grated 1 tsp.
• Egg - 1(optional).
• Salt - as per taste.
• Water - as required.
• Yogurt / Sour cream- 1 table spoon
• Black Pepper / cayenne Pepper if you want it to be spicy.
• Coriander/cilantro leaves
2.Drain and mash the cauliflower while it is still warm.
( I used food processor to grind it)
3.Stir in the cheese, egg, ginger, onions, bread crumbs(or whole wheat),
yogurt(or sour cream) , Cilantro& salt.
4.Adjust seasoning to taste. (Start with the lower amount of cheese, whole wheat,
cayenne, and salt. Add more as needed for taste and binding the pancake
mixture together.)
6.Coat the bottom of a skillet with olive oil over medium-high heat.
7.Form the cauliflower mixture into patties/spread it to make it thin using spoon.
8.Cook until golden brown & set, about 3 minutes per side.
9.Serve pancakes on a plate and top with hummus .
