Cauliflower Fried Rice is my favourite low-carb dish when I'm craving Chinese take-out.If you love fried rice but don't enjoy the carb count that comes with it, you'll love this.
Its Vegan, gluten - free and easy to prepare because all the veggies used in this recipe cook quickly.

Serves : 4
1/2 onion, chopped 3 garlic cloves/ 1 tsp garlic powder 1 tsp freshly grated ginger
2 green chillies(optional- for more heat) 2 Tbsp. soy sauce 3 tsp. sesame oil 2 tbsp vinegar 2 tsp chilli paste/Schezwan sauce/Sriracha Sauce 1 green bell pepper 1 red bell pepper 1/2 cabbage, chopped 1 tsp green onions
salt fresh cilantro/Coriander leaves 1/2 lime
until it acquires a fine rice like texture(Use food processor/Blender).
2.Place the processed cauliflower in a clean cheese cloth or kitchen towel and squeeze out the moisture as well as you can.
3.Mix soy sauce, vinegar and 1 tsp sesame oil in a small bowl. Set aside
3. Heat remaining 2 tsp sesame oil in a large pan over a high heat. Add onion ,saute until it turns pink. Add garlic and ginger to the pan. Cook until raw smell goes off.
5. Now add bell peppers, cabbage and stir fry for 2 mins.
6. Now add soy sauce mixture , chilli sauce / schezwan sauce and cook for 2 more mins.
7. Add in the cauliflower rice. Stir-fry about two minutes.
Add cilantro,green onions and Squeeze lemon on top of it and mix. Then toss everything together .Season with salt and pepper.
8. Cauliflower fried rice is ready to serve!

1.Steam the chopped cauliflower for 10 minutes. Then, process ituntil it acquires a fine rice like texture(Use food processor/Blender).
